Ideally, you should visit them on Tuesdays, Wednesdays or Thursdays using the park-to-park and enjoying the Hogwarts Express to move from one park to another.

The surprise is that the Sunday is the best day to enjoy the new park. You can also consider Monday, Friday or Saturday.
